1 1/2 pounds green beans, trimmed
1 Tbsp. olive oil
2 Tbsp. butter
2 shallots, thinly sliced
1/2 cup slivered almonds, toasted
1/4 cup dried cranberries
DIRECTIONS
Bring a large pot of water to a boil. Fill a large bowl with water and ice.
Add the green beans to the boiling water and cook until they are tender crisp; about 3-4 minutes. Remove the beans from the boiling water and plunge them in the ice bath to shock and cool.
Heat oil and butter in a large skillet over medium heat. Add shallots and cook stirring often until they are golden brown and crisp; 6-8 minutes.
Add the green beans, almond and cranberries to the crispy shallots and cook until warmed through and combined. Season with salt and pepper to taste.
