For the filling
1 ½ cups vanilla low-fat yogurt
8 ounces sour cream
2 ounces Woodbridge Sparkling Infusions Strawberry & Kiwi
1 box vanilla instant pudding and pie filling mix
For the topping
2 kiwis, sliced
4 strawberries, sliced
3 tablespoon orange marmalade
1 tablespoon Woodbridge Sparkling Infusions Strawberry Kiwi
Edible flowers, for garnish (optional)
DIRECTIONS
In a medium bowl, mix the filling ingredients with a whisk until fully incorporated. Cover with plastic wrap and place in fridge for approx. 30 minutes to allow filling to set.
Once filling has set, scoop 2 tbsp. of chilled filling into the individual tartlet shells, leaving about ¼ inch of room at the top.
Combine the apricot preserves and sparkling wine in a small dish and microwave for about 20 seconds. Press it through a mini mesh strainer to get rid of any chunks.
Arrange fruit slices on top of each tartlet in your favorite pattern or design. Gently brush the apricot glaze onto the fruit using a pastry brush.
