For the crust
5 store-bought tartlet crusts
For the filling
1 ½ cups vanilla low-fat yogurt
8 ounces sour cream
2 ounces Woodbridge Sparkling Infusions Strawberry & Kiwi
1 box vanilla instant pudding and pie filling mix
For the topping
2 kiwis, sliced
4 strawberries, sliced
3 tablespoon orange marmalade
1 tablespoon Woodbridge Sparkling Infusions Strawberry Kiwi
Edible flowers, for garnish (optional)
- In a medium bowl, mix the filling ingredients with a whisk until fully incorporated. Cover with plastic wrap and place in fridge for approx. 30 minutes to allow filling to set.
- Once filling has set, scoop 2 tbsp. of chilled filling into the individual tartlet shells, leaving about ¼ inch of room at the top.
- Combine the apricot preserves and sparkling wine in a small dish and microwave for about 20 seconds. Press it through a mini mesh strainer to get rid of any chunks.
- Arrange fruit slices on top of each tartlet in your favorite pattern or design. Gently brush the apricot glaze onto the fruit using a pastry brush.
